Ingredients Needed for Gingerbread Cookies:
1 cup
gluten-free whole oat flour 1/2 cup
organic coconut flour 2 teaspoons
organic ground ginger 2 teaspoons organic Ceylon ground cinnamon 3/4 teaspoon salt 1/2 teaspoon ground cloves 1/2 teaspoon
organic ground black pepper 1/2 cup
organic coconut oil 1 cup liquid sweetener of your choice 1 egg 1/2 teaspoon baking soda 1/3 cup
organic raw cacao
How to Make Gingerbread Winter Cookies?
- Add oil, egg and sweetener to a bowl and mix well with a mixer.
- Sift the flours in another bowl and mix all the other ingredients thoroughly.
- Slowly pour the solid mixture into the bowl containing the oil, keeping the mixer running.
- When the mixture reaches a dough consistency, divide it into 3 balls, wrap them in cling film and leave them in the fridge for 1.5 hours.
- Take the dough out of the fridge, place one piece between 2 sheets of wax paper and roll it out with a rolling pin. The dough will soften as it warms up. If the dough starts to break, roll it out as much as you can and let it rest at room temperature.
- When it reaches a height of about 1/2 cm, shape/cut it with your molds.
- Place greaseproof paper on your tray and place the shaped dough on it.
- Bake your shaped dough for 8-10 minutes in your oven, which you have preheated to 170 degrees.
Tips for Winter Gingerbread Cookies
- The ingredients you use should be at room temperature.
- Preheating your oven thoroughly will prevent your cookies from spreading.
- If you let your cookies cool after taking them out of the oven, they will gain their consistency well.
