Among all the products obtained from oatmeal, oatmeal has become one of the popular products due to its practical use. What does 'kazuz' mean? How does it happen?
Before examining the proportion of husk in oatmeal, let's take a look at what husk is.
What is husk , which we rarely encounter in the products from the wheat family that we consume in our daily lives, and which most of us have heard of for the first time, what does it mean? Why can we encounter it in a certain amount in wheat families?
According to TDK, husk is the shell that surrounds the spikelets or flower on the ear of the wheat family. It means a hollow, shelled nut.
Parts of oat grain:
In order to understand the husk a little better, it would be good to examine the oat grain in a little more detail and know what the parts of the oat grain are.
A grain of oatmeal consists of the following parts:
Husk: The husk of the oat grain is the inedible part that is high in fiber, low in protein and low in energy.
Bran: The edible outer layer of the oat grain. After the hull is removed, it makes up approximately 12-17% of the oat grain.
Endosperm: It is the floury part of the oat grain, the source of beta glucan, the part containing protein and carbohydrates. It constitutes approximately 80% of the oat grain.
Embryo: The embryo part of the oat grain, commonly known as germ, is the life source that enables the formation of a new plant and constitutes an average of 3-7% of the oat grain.
All parts of an oat grain except the husk are edible, and all products obtained from oats are obtained from this part.
What is Oatmeal? How is it obtained?
Oatmeal is obtained from whole oat grains with the hull removed. After a short pre-cooking in steam, it is crushed and dried to make it ready for consumption. After this process, the raw taste is removed and it is ready for direct use.
What is oatmeal hulls? What proportion is it in?
The husk ratio detected in oat genotypes varies depending on the variety and environmental conditions; it is reported in the sources to be in the range of 25-30%.
In cool, rainy years and places, the grains are fuller than normal, and the husk ratio is lower in such times, while in dry years and places, the husk ratio is higher.
Why do we find some husk in oatmeal?
Since our gluten-free oatmeal is natural, it is likely to contain some hulls. You may encounter hulls in products that have not been overly processed, such as our gluten-free oatmeal, and we need to remove the large hulls when using it.
