The difference between oven rice pudding and regular rice pudding is that a mixture of milk and egg yolk is added to the pot. We used organic Ceylon cinnamon powder in the presentation of the rice pudding, you can use many alternatives such as hazelnut powder, pistachio powder, lavender powder or lemon zest according to your taste and pleasure.

Ingredients Needed for Homemade Gluten-Free Rice Pudding Recipe

  • 1 Tbsp organic gluten-free oatmeal
  • 2 tablespoons organic coconut flour
  • 300 ml coconut milk or milk alternative
  • 2 tablespoons organic grated coconut
  • 1-2 tablespoons of honey

How to Make Gluten-Free Rice Pudding?

  • Let's mix the milk, coconut flour and grated coconut well in our sauce pan.
  • Let's cook it on low heat. When it starts to boil, take it off the heat and let it cool.
  • After it becomes lukewarm, let's add our honey and mix it again. (At this point, you can taste it and add honey according to your taste.)
  • Then bake our rice puddings in the oven at 100-200 degrees until the top is browned.

Tips for Gluten-Free Rice Pudding

  • After adding the ingredients to the pot, be careful to stir until it reaches the desired consistency so that it does not stick to the bottom.
  • If you want to thicken the consistency of the rice pudding you are cooking, the flour you add later will cause it to clump in the hot milk. Therefore, mixing a small amount of warm milk with the flour in a separate place and stirring while pouring it into the pot will prevent it from clumping.
  • If you want a thicker consistency, you can use 3 tablespoons of coconut flour.

What Other Ingredients Can Be Added to Gluten-Free Rice Pudding ?

You may not like coconut. We used coconut milk in making rice pudding to offer you the variety of uses of coconut milk. You can also try it with alternative milk varieties such as cow's milk, goat's milk, almond milk, soy milk, lactose-free milk. We used grated coconut with coconut milk because it is both a harmonious flavor and will give consistency to the milk. If you want, you can use lavender flowers or lemon peel instead of grated coconut using any milk you want, but we should say that you will need to add a little more flour. You can use many alternatives such as hazelnut powder, pistachio powder, lavender powder or lemon grated instead of organic Ceylon cinnamon powder.
