It is the grinding of single type (Criollo) cocoa beans, which are produced in controlled and remote areas throughout the year, without undergoing heat treatment. How is Organic Raw Cocoa 320g Produced?

The fruits collected from organic farming certified cocoa trees first go through a natural fermentation process. The fermentation process allows the cocoa to mature. Then, these cocoa beans go through sterilization, cleaning, sorting, pressing and drying processes that are only found in a handful of producers in Peru, with natural methods. No high heat separation or drying is done during these processes. In this way, the high ORAC values, flavanols and enzymes that are characteristic of our product are higher than those of heat-treated products. Since this product is not exposed to heat, it has a harder and more intense taste than conventional cocoas. The use of Criollo type beans, which are the highest quality beans that 8% of the world's cocoa industry can reach, is of great benefit in the formation of this taste.
