- 6 fresh apricots
- 1 cup almond flour
- 1/3 cup quinoa flour
- 2 eggs
- 1/2 cup sweetener
- 2 tablespoons of plant milk
- 41/3 cups melted organic coconut oil
- 1/2 teaspoon organic Ceylon cinnamon powder
- Organic cocoa nibs
- Preferably 1/2 teaspoon vanilla
- 1 teaspoon of baking soda
Homemade Apricot Muffins Recipe Without White Flour
- Split the apricots in half.
- Place the apricots in a small saucepan, add enough water to cover them, and cook uncovered over medium heat.
- When you see that the water has been absorbed, perhaps about 1 tablespoon, turn off the heat.
- To put it in a 6-cup mold, take 6 apricots and place them on the bottom of the muffin molds.
- In another bowl, beat the eggs with the milk, add the melted coconut oil and preferably the sweetener and mix.
- Add all remaining ingredients except apricots and mix.
